Hake, Beans, Chorizo
A quick, easy and healthy mid week supper.

- 2 Fillets of White Fish (I used hake from the freezer, cod or haddock would work too)
- 1 tin of butter beans, drained
- 1 tin of cannellini beans, drained (you could use 2 tins of the same beans if you prefer, or substitute chickpeas instead)
- 1 Large handful greens (I used wild garlic as have a glut of it at the moment, but spinach and a clove of garlic would be great)
- Chorizo (pancetta or bacon could be substituted here)
- Knob of butter
Fry your chorizo.
Once the Chorizo is golden, add your beans.
Finely chop half your greens and add to the pan.
Season to taste and add some water if it is too dry.
Stir in the rest of your greens and Move it all to a saucepan.
In the frying pan you’ve just used, melt your butter so it’s foamy, and fry your fish – it should only take a couple of minutes on each side.
Put your bean mixture in a bowl and top with your fish.
